And we continue with fish this evening at Acqua Pazza, Bologna, and daring or not, with a Rosé Réserve from Champagne Charles Heidsieck. Again, this full-bodied wine would go well with a discussion of hermaphrodites, but let's leave that and talk about the tricky assemblage instead.


80 percent of the wines of the dominant vintage are made up of equal parts Meunier, Chardonnay and Pinot Noir, while the 20 percent of the reserve wines are made up of half Pinot Noir and half Chardonnay. From a holistic point of view, this cuvée is composed of 40 percent Pinot Noir, 35 percent Chardonnay and 25 percent Meunier. Vinification in stainless steel.


But what do these numbers say, given a nice balance of freshness and structure that also delights the fish just caught.
